317g Grainless Superfood Flour
254ml lukewarm water
22ml olive oil
6g baking powder
Heat: Pre-heat oven to 400 F.
Mix: In the bowl of a stand mixer with the paddle attachment, place yeast, oil and lukewarm water. Let it sit about 5 minutes. In a separate bowl, mix together the Superfood Flour, salt and baking powder. Add the dry ingredients to the wet mixture and mix on low speed until the dough starts to come together. Gradually increase the speed of the mixer until all ingredients are fully incorporated. The dough will be wet.
Proof and Shape: Using oil to coat your hands, gather the dough into a ball and place into a well oiled bowl. Let the dough rise at 90 degrees F for about 30 minutes. Coat your pizza pan with olive oil to prevent the dough from sticking to the pan. Take one ball of dough and place it in the center of the pan. Flatten the dough with your hands. Starting at the center and working outwards, spread the dough out approximately ½” thick to the edges of the pan.
Bake: Add your favorite toppings. Bake for 25 minutes until the cheese is melted and the crust is crisp on the edges.
